Ingredients:
2 pounds boneless, skinless chicken breasts
Garlic powder
Kosher salt
Fresh black pepper
Flour (for dusting the chicken)
2 eggs
1 tablespoon whole milk or heavy cream
3 tablespoons butter, divided
2 cups chicken stock
1 tablespoon cornstarch mixed with 1 tablespoon of water
2 tablespoons fresh lemon juice

Directions:
Season chicken breasts with garlic powder, salt, and pepper. If thick, slice in half horizontally.
Place flour in a shallow dish. Beat eggs with milk or cream in another bowl.
Dredge chicken in flour, then melt 2 tablespoons butter in a skillet over medium heat and cook chicken dipped in egg mixture until golden, about 3-4 minutes per side.
Remove chicken, deglaze skillet with a splash of chicken stock, then add remaining stock and lemon juice with last tablespoon of butter.
