-For the Beef Gyro Pita Wrap:
1 x recipe Homemade Pita Bread
1/2 x recipe Authentic Greek Tzatziki
1 red onion, sliced
2 large tomatoes, sliced
Shredded lettuce

Directions:

Marinate the steak: Combine lemon juice and zest, garlic, olive oil, oregano, salt, honey, both paprikas, and black pepper in a dish. Add the steaks, ensuring they’re in a single layer, and rub the marinade in. Cover and refrigerate overnight.

Prepare the fries (optional): Peel and cut potatoes into strips. Toss with salt and let drain for 20 minutes. Heat oil in a heavy saucepan and fry potatoes until golden, about 10 minutes. Remove and season with salt.

Cook the beef: Heat a skillet over high heat. Cook steaks to your preference, achieving a caramelized crust. Thinly slice the steaks, removing any excess fat, and toss back in the skillet to coat in pan juices.

Assemble the gyro: Spread tzatziki on pita breads, add beef slices, red onion, tomato, fries, and lettuce. Wrap and serve.
