Instructions:

In a bowl, combine the sliced beef with 2 tablespoons of soy sauce, minced garlic, grated ginger, and cornstarch. Mix well to coat the beef evenly. Let it marinate for at least 30 minutes.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the sliced onions and sauté until they become soft and translucent, about 3-4 minutes.
Push the onions to one side of the skillet and add the marinated beef to the other side. Stir-fry the beef until it is cooked through and nicely browned, about 4-5 minutes. Avoid overcrowding the pan to ensure proper browning.
If using vegetables, add them to the skillet and stir-fry until they are crisp-tender, about 3-4 minutes.
In a small bowl, mix the remaining 1 tablespoon of soy sauce with 2 tablespoons of water. Pour the mixture into the skillet and stir constantly until the sauce thickens and coats the beef and vegetables evenly, about 1-2 minutes.
Transfer the beef and onion stir fry to a serving dish. Garnish with sliced green onions or sesame seeds.
Serve hot over steamed rice or noodles.
